Green pea spread

This green pea spread is a beautiful summer veggie pate that can be served on crostini or fresh baguette. An ideal appetiser or nibble at parties or you can take it with you to a picnic or trip.

Ingredients
  

  • 200 g of green peas
  • 3 Tbsp olive oil
  • 2 Tbsp rice wine vinegar
  • 2 Tbsp finely chopped mint leaves
  • 2 Tbsp grated Parmesan
  • Salt and pepper

Method
 

  1. Cook the peas in boiling water for 3-5 minutes or steam over hot water. Drain, then immediately pour ice cold water over it to keep its colour.
  2. Using a food processor, blend the peas, grated cheese, mint, rice vinegar and oil into a textured paste. Leave it a bit lumpy – it shouldn’t be too smooth. Season to taste, then mix well.
  3. Let it rest in the fridge for about 30 minutes.
  4. Before serving garnish with mint leaves and Parmesan strips.
  5. Serve it on toasted ciabatta or baguette. Or serve it as a dip with crackers, breadsticks and so on.
