Mixed berry cobbler

This mixed berry cobbler is a perfect dessert for Sunday Lunch. I make it with almond milk and dairy-free margarine, but if dairy is not an issue just use normal butter & milk. This version doesn’t have much sugar, so if you have a sweet tooth, add more to it.

Ingredients
  

  • 350 g frozen mixed berries
  • 50 g cane sugar soft
  • 200 g self-raising flour
  • 50 g butter or margarine diced
  • 1 large egg
  • 100 ml milk or almond milk
  • 1 tsp ground cinnamon
  • 1-2 tsp extra sugar for sprinkling

Method
 

  1. Preheat the oven to 190°C.
  2. Measure out the sugar, reserve 1 tablespoon. Put the rest and the berries into a saucepan, then cook on low heat for about 5 minutes.
  3. Transfer the berries to a baking dish, sprinkle with cinnamon.
  4. Sift the flour into a mixing bowl, add the butter. Using your fingertips, rub the flour and butter together to make a light breadcrumb texture. Add the reserved sugar and mix thoroughly.
  5. Mix the eggs with the milk, add the crumble to it and knead it into a dough .
  6. Form 16 dumplings from the dough – drop these on top of the fruits. Sprinkle with the extra sugar .
  7. Bake for about 30 minutes or until the cobbler turns golden brown.
  8. Serve warm with cream, custard or vanilla ice cream – or Greek yoghurt.
