Mini chocolate and cherry muffins

These mini chocolate and cherry muffins are perfect for parties and special occasions – use brandy or other alcohol-soaked cherries for adult parties!  You can make your own chocolate milk by mixing good-quality cocoa powder and/or dark chocolate with hot milk, then let it cool. Use this method too if you need the muffins to be dairy-free (almond milk or oaty milk are the best alternatives).  Serve the muffins at afternoon-tea parties, picnics, celebrations and so on.

Ingredients
  

  • 2 cups self-raising flour
  • 2 eggs beaten
  • 1 Tbsp cocoa powder
  • ½ tsp baking soda bicarbonate of soda
  • 1 cup chocolate milk
  • ½ cup melted butter or margarine
  • ½ cup unrefined cane sugar
  • Cherries in syrup or in brandy drained and pitted

Method
 

  1. Preheat the oven to 180°C.
  2. Sift the flour, cocoa and baking soda in a large bowl then mix in the sugar.
  3. Mix the chocolate milk with the eggs and butter, then add to the flour mixture and stir gently until you get a lump-free batter.
  4. Put some paper cases into two mini muffin tins and spoon the batter in the cases two-thirds full. Press one cherry into each muffin.
  5. Bake for 15-20 minutes, then transfer the muffins to a wire rack to cool.
