Apple and pear muffins

These apple and pear muffins are perfect snacks for the autumn – they taste delicious and go so well with a cup of tea or coffee! Alternatively take them with you to a picnic or serve them at a party during holiday seasons!

Ingredients
  

  • 2 medium eggs
  • 100 ml vegetable oil
  • 200 ml milk or dairy-free milk
  • 100 g unrefined cane sugar
  • 300 g self-raising flour
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 2 apples
  • 2 pears
  • Maple syrup optional

Method
 

  1. Preheat the oven to 200°C. Line a muffin tin with paper cases.
  2. Sift the flour, cinnamon, ginger together in a mixing bowl.
  3. In another bowl mix the eggs with the milk, oil and sugar.
  4. Peel & core the fruits, then coarsely chop them into small pieces.
  5. Add the fruits to the flour mixture, gently stir with a wooden spoon. Pour in the egg-mixture. Mix until just combined.
  6. Fill the muffin cases with the batter and bake in the oven for about 25 minutes until golden brown.
  7. Move them to a wire. While they’re still warm, prick their top with a skewer and spoon some maple syrup over them, if you like. Let them cool.
