Stilton and walnut puffs

For the winter festivities it’s good to know a few easy-but-yummy recipes. I always keep some puff pastry in my fridge during these months, because it’s a wonderful base for last minute nibbles or I can use it to make effortless yet gorgeous appetizers for dinner parties. These Stilton and walnut puffs are a perfect example – easy-peasy to make, yet they make tasty bites at Christmas and New Year’s Eve parties.

Ingredients
  

  • 100 g Stilton
  • 75 g cream cheese
  • 1 pack of ready-rolled puff pastry
  • 1 egg yolk
  • 30 g walnut roughly chopped

Method
 

  1. Crumble the cheese into a mixing bowl, add the cream cheese.
  2. Unroll the pastry on a lightly floured surface and, using a 6-8 cm round cutter (or a glass), stamp out circles. Re-roll any leftover pastry and cut out more rounds.
  3. Brush the edges with egg yolk and put 1 teaspoon of the cheese mixture on one half of the circle. Add a few bits of walnuts. Fold over the other half of the pastry and pinch the edges together. Make sure they are sealed well!
  4. Place the parcels on a lined baking tray. Brush the top of each parcel with egg yolk and scatter some walnuts on the top.
  5. Rest in the refrigerator for 15 minutes, whilst you heat up the oven. Bake for 12-15 minutes, at 180°C, until golden.
  6. Serve warm or at room temperature.
