Herby sweet potato soup

This is a wonderful soup to warm you up and/or strengthen your immune system. It’s very simple to make and can be served with blue cheese (such as Stilton or Roquefort) or without. It’s so delicious that you could even serve it as a starter at dinner parties or as a warming-up soup at outdoor events and activities.

Ingredients
  

  • 1 large onion
  • 1 Tbsp rosemary leaves fresh
  • 2 Tbsp olive oil
  • 4 cloves garlic
  • ¼ tsp chilli flakes
  • 1 kg sweet potatoes
  • 1.2 litre vegetable broth
  • 100 g blue cheese optional

Method
 

  1. Peel and finely chop the onion and garlic.
  2. Peel & dice the sweet potatoes.
  3. Heat the in a pan, add the onion and rosemary leaves then fry for 3-5 minutes until soft. Add the garlic and chilli, stir for a minute.
  4. Add the sweet potato cubes, stir for two or three minutes, then pour in the hot stock.
  5. Bring it to the boil, then simmer over a low heat until tender (this will take about 20 minutes).
  6. Liquidize or blend it with a hand-held blender until smooth and creamy. Taste and season to your liking.
  7. Serve with blue cheese crumbled on top, if you like, or just with ground pepper.
