Mutton Curry Odia Style
Mutton is a delicacy across India and is used on special occasions. This recipe is from Odisha, an eastern state in India where my mother-in-law grew up as a child. It is simple to cook, very tasty and goes well with rice or roti alike.

- Cut the mutton into bite-sized pieces and marinate with the Marinade ingredients for 30 minutes.
- Heat oil in a vessel and add cardamom, cloves and bay leaves and fry for 2-3 minutes. Add the chopped onions and fry till they are golden brown. (Adding salt to onion helps to cook faster).
- Add ginger and garlic pastes and mix for 2-3 minutes till the raw flavors disappears.
- To this add the chopped tomatoes and fry till the tomatoes are soft.
- Add marinated mutton, turmeric, red chilli, cumin and coriander powders and potatoes (optional).
- Cook with the cover on for about 30 minutes or till the meat is tender.
- Add the chilli paste and garam masala and mix. Add 1 cup of water and cook with the lid on for another 15-20 minutes.
- Remove from the stove, add ghee and coriander powder.
