Spiced jackfruit patties
Jackfruit is an ideal ingredient to make vegan patties. It has a thick, almost meaty texture that lends itself to meatball or fishcake-like dishes. These spiced jackfruit patties were baked in the oven but you can fry or grill them if you prefer. You can serve them in a sandwich, flatbread, burger or with a salad and other side dishes of your choice. If you make them smaller, like small meatballs, they would be ideal as party nibbles!

- Mix the flaxseed with the water and set aside for about 15 minutes until you get a thick paste.
- Drain the jackfruit and put it into a large mixing bowl, then mash it with a fork.
- At the onion, garlic, the ground spices and tomato purée. Season generously with salt and pepper.
- Add the chopped coriander and the rice flour then mix with your hands until you get a textured dough.
- Form about eight equal sized balls from the mixture then flatten these between your palms.
- Put the patties onto a lined baking sheet and bake in a hot oven for 15 to 20 minutes until golden, or fry/ griddle them in a pan over medium heat for five minutes or so, until golden.
- Serve the patties warm or at room temperature.
