Avocado hummus

This avocado hummus is a delicious, healthy and vegan fusion dish – guacamole meets hummus. It’s rich and creamy , ideal dip for parties or  healthy snacking, nut it can used as stuffing ( padron peppers or eggs etc) or as sandwich spread/filling.

Ingredients
  

  • 1 small avocado
  • 1 cup cooked chickpeas
  • 2 spring onions white part only, chopped
  • 2 cloves of garlic chopped
  • 1 Tbsp tahini
  • ½ tsp ground cumin
  • 2 Tbsp chopped parsley or coriander leaves
  • 1 or 2 Lime juiced
  • Salt &pepper
  • Dash of tabasco optional
  • Smoked Paprika and olive oil to garnish

Method
 

  1. Cut the avocado in half. Take out the pit and scoop out the flesh.
  2. Put all other ingredients in a food processor. Blend for a few seconds, then add the avocado. Pulse until you get the desired texture and thickness (add some water to thin it down – you can use the chickpea’ s cooking water).
  3. Taste it and adjust the seasoning, lime, tahini, tabasco to your liking.
  4. Transfer the hummus into a serving bowl, then garnish with paprika and chopped spring onions.
