Cranberry Sauce with port and orange

You can’t have roast turkey without cranberry sauce! The basic recipe is incredibly easy: just cook 300g of fresh cranberries, 100 ml fruit juice, 150g sugar and some spices (such cinnamon, star anise or cloves) and citrus zest until you get a thick, sticky jam. This Cranberry Sauce with port and orange is a rather boozy version that goes superbly with roast goose or duck!

Ingredients
  

  • 300 g fresh cranberries
  • 100 ml port red
  • 1 small piece of cinnamon
  • 1 orange
  • 150 g sugar approx.
  • 1 Tbsp orange liqueur Grand Marnier or similar

Method
 

  1. Grate the orange zest and squeeze out its juice.
  2. Put the cranberries, cinnamon, port, orange zest & juice into a pan. Bring to the boil, then simmer under cover, until the cranberries start to pop and soften. Then add the liqueur and enough sugar to your taste.
  3. Turn off the heat, remove the cinnamon, and let it rest under cover to thicken.
