Plantain fritters

Plantain fritters are very easy to make and taste delicious. This recipe is from southern state of Andhra and everyone in my family loves these fritters.

Ingredients
  

  • 2 medium sized plantain
  • ½ cup split chickpea
  • 2 Tbsp rice flour
  • 1 big sized onion finely chopped
  • 2 green chillies finely chopped
  • ½ tsp ginger garlic paste
  • A pinch of turmeric
  • 1-2 tsp chilli powder
  • ¼ tsp garam masala
  • Salt to taste
  • 3 Tbsp oil
  • 1 cup bread crumbs
  • Handful of coriander leaves finely chopped
  • Water as required

Method
 

  1. Wash and cut the edges of plantain. Cut the plantain in two half’s & cook them. Peel off the skin & mash the plantain.
  2. Cook the chickpeas in pressure cooker until done. If there is still water, transfer the chick peas in to a pan and evaporate the water on medium heat. Mash the chick peas to coarse paste.
  3. Take a pan, add 1 Tbsp oil and fry the finely chopped onions with ginger garlic paste until translucent.
  4. Take a bowel and mash the plantain. Add the chick pea paste, onions, chopped green chillies, rice flour, turmeric, chilli powder, garam masala, chopped coriander, salt. Mix well and set aside.
  5. Take small portion of the mixture and make it in to small ball. Take the ball & press it with your hands. Repeat for whole mixture.
  6. Take a pan and add the remaining oil. Take the raw fitter and coat it in bread crumbs and roast them until they get fully brown on both sides.
  7. Serve hot with sambar rice or ketchup.
