Background

This avocado, artichoke and tomato salad is It's ready in just a few minutes, it's healthy, light & tasty - so it's perfect for a lazy Summer lunch! Serve it with toasted pitta or tortilla.

Ingredients

1 avocado
1 large ripe tomato
½ jar of artichokes in oil
1 shallot
1 lime
2 Tbsp chopped coriander or basil

Instructions

Cut the avocado in half and remove the stone. Cut the flesh into little cubes.
Dice the tomato.
Drain the artichokes but keep the oil for the dressing.
Finely slice the shallot.
Mix the avocado, tomato, shallot and coriander in a serving dish. Drizzle with a Tbspful of the jar oil and squeeze some lime juice over the salad. Season with salt and pepper. Gently toss , taste and adjust the lime-oil-seasoning to your liking.
