Baked Aubergine with cheese and bacon

Background
This baked Aubergine with with cheese and bacon is so simple yet very satisfying. Ideal dish for busy or lazy days. Or serve it as a side dish with roast poultry! I made it with mozzarella cheese, but Cheddar, Emmental or Gruyere would work too. You can add a few pieces of basil leaves too, if you like!
Ingredients
- 2 medium aubergines
- 1 mozzarella block
- 1 onion
- About 10 strips of smoked bacon
Instructions
- Preheat the oven at 180°C. Line a baking tray with baking paper.
- Clean the aubergines, then cut several slits across them, as if slicing, but only two-thirds of the way through.
- Slice the onions and the cheese.
- Stuff each slits with bacon, cheese and onion slices.
- Bake for approx. 45 minutes - until the aubergine is tender.
- Serve hot with a crispy salad.
