Background

This baked Aubergine with with cheese and bacon is so simple yet very satisfying. Ideal dish for busy or lazy days. Or serve it as a side dish with roast poultry! I made it with mozzarella cheese, but Cheddar, Emmental or Gruyere would work too. You can add a few pieces of basil leaves too, if you like!

Ingredients

2 medium aubergines
1 mozzarella block
1 onion
About 10 strips of smoked bacon

Instructions

Preheat the oven at 180°C. Line a baking tray with baking paper.
Clean the aubergines, then cut several slits across them, as if slicing, but only two-thirds of the way through.
Slice the onions and the cheese.
Stuff each slits with bacon, cheese and onion slices.
Bake for approx. 45 minutes - until the aubergine is tender.
Serve hot with a crispy salad.
