Background
This simple carrot and radish salad is ready in just a few minutes. It goes really well with grilled/barbecues meat and fish, or can be used as a sandwich, burger or wrap filling. If you don't have lime, just use lemon. You can supplement the salad with fresh herbs - coriander, mint or parsley would be the best.
Ingredients
- 2 medium carrots
- 5 radishes
- grated zest and juice of 1 lime
- 1 Tbsp olive oil
- ½ red chilli, cupped (optional)
- couple of pinches of sesame seeds
Instructions
- Using a vegetable peeler cut the carrots into thin ribbons.
- Trim then slice the radishes into small, matchstick size strips.
- Whisk together the lime zest & juice, oil, chilli (if used). Season with salt and pepper.
- Toss the vegetables with the dressing.
