Background

This simple carrot and radish salad is ready in just a few minutes. It goes really well with grilled/barbecues meat and fish, or can be used as a sandwich, burger or wrap filling. If you don't have lime, just use lemon. You can supplement the salad with fresh herbs - coriander, mint or parsley would be the best.

Ingredients

2 medium carrots
5 radishes
grated zest and juice of 1 lime
1 Tbsp olive oil
½ red chilli, cupped (optional)
couple of pinches of sesame seeds

Instructions

Using a vegetable peeler cut the carrots into thin ribbons.
Trim then slice the radishes into small, matchstick size strips.
Whisk together the lime zest & juice, oil, chilli (if used). Season with salt and pepper.
Toss the vegetables with the dressing.
