Chilli, garlic & lime squid

Background
This chilli, garlic & lime squid is cooked in just 5 minutes so it's perfect on busy days. Also, it can be served warm or cold - so it's ideal for picnics, trips, parties or as tapas/nibbles with a glass of wine.
Ingredients
- 500g cleaned squid
- ½ Tbsp vegetable oil
- 1 cm ginger
- 1 clove of garlic
- 1 chilli
- 4 spring onions
- juice of ½ lime
- ½ tsp cane sugar
- 1 Tbsp chopped coriander leaves
Instructions
- Wipe the squid with kitchen paper towel, then cut it into 1cm thick rings. Leave the tentacles whole (if there are any).
- Peel and chop the ginger & garlic. Cut the chilli in half, remove the seeds and vein, then chop the flesh. Slice the spring onion diagonally.
- Heat up the oil in a frying pan and cook the chilli, garlic and ginger for half a minute. Add the squid, fry for 1 minute while constantly stirring.
- Add the spring onion, sugar and lime juice, a little salt and pepper. Stir-fry for half a minute, scatter the coriander leaves on top and turn off the heat.
