Background
This little pineapple salsa is an amazing condiment for fried or grilled pork! It takes only a few minutes to make - no cooking involved (unless you want to grill the pineapple, which adds a nice caramelised flavour to the salsa.)
Ingredients
- ½ fresh pineapple (about 300g cleaned)
- ½ red onion or 3 spring onions
- 1 red chilli
- 1 Tbsp chopped fresh coriander
- 1 Tbsp chopped fresh mint
- 1 lime, squeezed
Instructions
- Peel and finely chop the pineapple. Put them in a serving bowl.
- De-seed and finely chop the chilli. Add these to the pineapple together with the chopped herbs.
- Chop the onion and add to the salad. Squeeze the lime on top and toss.
- Chill until serving.
Tips
- Variations:
- Add half a chopped bell red pepper to the salad - use green chilli in this case.
- Grill, BBQ or griddle the pineapple (cut into wedges) until charred then chop.
