Background

This little pineapple salsa is an amazing condiment for fried or grilled pork! It takes only a few minutes to make - no cooking involved (unless you want to grill the pineapple, which adds a nice caramelised flavour to the salsa.)

Ingredients

½ fresh pineapple (about 300g cleaned)
½ red onion or 3 spring onions
1 red chilli
1 Tbsp chopped fresh coriander
1 Tbsp chopped fresh mint
1 lime, squeezed

Instructions

Peel and finely chop the pineapple. Put them in a serving bowl.
De-seed and finely chop the chilli. Add these to the pineapple together with the chopped herbs.
Chop the onion and add to the salad. Squeeze the lime on top and toss.
Chill until serving.

Tips

Variations:
Add half a chopped bell red pepper to the salad - use green chilli in this case.
Grill, BBQ or griddle the pineapple (cut into wedges) until charred then chop.
