Swedish crayfish pasta
Crayfish are very popular in Sweden, they even have crayfish parties in the Summer called kräftskiva. This Swedish crayfish pasta uses just the tails, which you can buy in most supermarkets. It’s a simple, zingy, yet filling dish. You can use any dried pasta, even gluten-free versions.

- Cook the pasta according to the instructions on the packet.
- Meanwhile, sauté the onion in the oil or butter for about 5 minutes in a frying pan. Add the wine and the cornflour and simmer gently until thickened. Stir in the crème fraîche or yoghurt, add the crayfish, dill and lemon zest and half of the lemon juice. Season to taste, stir until the sauce is thick and and creamy.
- Drain the pasta and stir through the creamy sauce.
- Serve with the remaining lemon juice and chopped dill scattered on the top.
