Gluten-free oat cookies with mixed seeds and fruits
I made these vegan, sugar-free, fat-free and gluten-free oat cookies with mixed seeds and fruits for breakfast the other day, using a pack of seeds and dried fruit mixture I bought in the supermarket. You can mix your own, using sunflower seeds, pumpkin seeds, raisins, sultanas, cranberries, apricot, prunes, dates etc. These cookies are perfect for healthy snacking during the day too.

Method
- Mash the bananas with a fork or blend them in a blender.
- Add the oats, vanilla, cinnamon or mixed spice (if used)- then mix well.
- Let the mixture rest for about ten minutes. Meanwhile, set the oven to 180°C. Line a baking tray with parchment paper.
- Add the seeds & dried fruits mixture to the oats and combine gently.
- Using your hands, make 8 equal sized balls, then press them between your palms. Place them on the prepared baking tray.
- Bake in the oven for approx. 10- 15 minutes until golden.
