Turkey and feta koftas
These simple turkey and feta koftas have a Greek or Middle Eastern flavour to them – you can spice them up with some ground cumin and chilli flakes if you like! Serve them with flatbread and a yoghurty salad such as Tzatziki. It’s very easy to make them – ideal for a Friday-night homemade “takeaway” or parties, BBQs and so on.

- Soak 8 wooden skewers in water.
- Finely chop the onion then fry it in 1 Tbsp of oil until soft. Let it cool.
- Turn on the grill/ BBQ or heat a griddle pan.
- Mix the mince minced meat with the feta, onion and parsley then season to taste with salt and pepper.
- Make 8 roulades with wet hands around the skewers. Make sure they stick to the skewers otherwise they will fall off!
- Brush them with the remaining oil and cook them for about 10 minutes, turning several times.
- Serve warm.
