Mandarin Chicken bake

If you want to cook an easy, laid back meal during the winter festivities or for Valentine’s day – try out this Mandarin Chicken bake recipe! Honestly, its’ absolutely delicious and needs very little effort! Serve it with a mash, or boiled rice and some veggies. You can also rub some five spice powder into the skin – this version would be ideal during Chinese New year!

Ingredients
  

  • 8-12 pieces of mixed chicken thighs and drumsticks
  • 4 Tbsp mandarin or orange marmalade
  • 2 Tbsp olive oil
  • 1 Tbsp Dijon mustard
  • 1 Tbsp grated ginger
  • 2 garlic cloves minced
  • salt and pepper
  • 4 mandarins clementines or tangerines
  • 1 Tbsp chopped parsley

Method
 

  1. Wipe the chicken clean with paper towels then prick the skin (not flesh) all over with a sharp knife.
  2. Preheat the oven to 200°C.
  3. Mix the marmalade, mustard, oil, garlic, ginger, salt and pepper in a large bowl. Glaze the chicken pieces with this mixture and put them into a roasting tin. Pour the leftover mixture over them.
  4. Slice the mandarins into rounds, put most of these on top of the chicken – squeeze a few over the chicken.
  5. Cover the tin with foil and put it in the oven for 20 minutes.
  6. Remove the foil and roast for a further 30-40 minutes until golden brown, occasionally basting the chicken with the juices.
  7. Scatter the parsley on top just before serving.
