Balsamic baked shiitake and tomatoes

This balsamic baked shiitake and tomatoes can be reserved on a piece of sourdough as a light lunch (with a crispy salad on the side); or as a lovely side dish that goes well with steak, chicken or fish.

Ingredients
  

  • 100 g shiitake
  • 1 handful of baby tomatoes on the vine
  • 1 clove of garlic
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp olive oil
  • 1 Tbsp soy sauce
  • Ground pepper
  • To serve: chopped fresh herbs of your choice such as parsley, coriander, mint, chives etc.

Method
 

  1. Preheat the oven to 180°C.
  2. Scatter the mushrooms and tomatoes into a baking dish.
  3. Add the minced garlic, balsamic viniger, oil and soy sauce. Season with pepper, then toss well.
  4. Bake for 15-20 minutes, until the mushrooms are tender and the tomatoes have softened.
  5. Serve with fresh herbs scattered on top.
