Gingerbread cookies

Gingerbread men dough can be used for other shapes too during the winter holidays – for Halloween use moon, bat and ghost shapes, for Christmas use star, tree, bell shapes and so on. The recipe of these gingerbread cookies is worth remembering, as it’s a really easy bake yet the biscuits are absolutely yummy. Decorate them nicely – and you can give them to your friends as presents!

Ingredients
  

  • 350 g flour
  • 1 tsp ginger
  • ½ tsp ground cloves
  • ½ tsp ground cinnamon
  • 1 tsp baking soda
  • 100 g butter or dairy free spread
  • 100 g soft cane sugar
  • 1 egg
  • 4 Tbsp golden syrup

Method
 

  1. Preheat the oven to 180°C.
  2. Mix the flour with the baking soda and spices. Rub in the butter with your finger tips then add the sugar and mix.
  3. Mix the syrup with the egg in a small bowl, then add this to the crumbs, and combine until you get a smooth dough. Knead it for a couple of minutes on a lightly floured work surface (like with bread dough).
  4. Roll it out to 5mm thickness then stamp out little people or festive shapes.
  5. Place the cookies onto a lined baking sheet and bake for 10-15 minutes until golden.
  6. Leave to cool on a wire rack, then decorate them with icing/chocolate pen if you like.
