Background

If you want a quick and easy dish for lunch or as a starter in a dinner menu, this recipe will tick the boxes! Serve it with bread or with green leafy salad.

Ingredients

4 cleaned medium squid
4 slices of streaky bacon, smoked
2 spring onions, chopped
2 pinches of dried chilli pepper flakes

Instructions

Rinse and pat dry the squid. Halve large tentacles lengthwise ,then cut the bodies crosswise into 1cm thick rings.
Dice the bacon then fry it over medium heat until golden and crispy. Transfer them to a plate lined with paper towel to drain.
Season the squid with salt and pepper then fry them in the bacon fat together with the spring onion and the chilli flakes for about 3-5 minutes.
Serve it immediately, sprinkled with bacon and parsley. Drizzle some lemon juice over it.
