Vegan spiced apple and oat crumble

This vegan spiced apple and oat crumble can easily be gluten-free too if appropriate flour and oats are used. It’s super easy to make –  the result is really yummy and zingy, perfect as an autumnal or winter pudding!

Ingredients
  

  • 2 green cooking apples
  • 2 Tbsp apple juice
  • 2 tsp cinnamon
  • 2 tsp ginger powder
  • ½ tsp crushed cloves
  • 50 g flour gluten-free, if needed
  • 50 g rolled oats gluten-free, if needed
  • 50 g unrefined muscovado sugar
  • 50 g dairy-free margarine

Method
 

  1. Preheat the oven to 180°C.
  2. Peel and core the apples, then chop roughly into bite-sized chunks or cut them into thin slices.
  3. Put them in an oven-proof dish. Pour over the apple juice, scatter some sugar (about 2 Tbsp.), the crushed cloves, and half of the cinnamon & ginger over the apple.
  4. Rub the margarine with the flour, ginger and cinnamon until you get a mixture resembling breadcrumbs, then add the oats and the remaining sugar.
  5. Cover the apple evenly with the oat crumble, slightly pressing the top down with a spoon.
  6. Bake for 20-25 minutes until the top is golden and crispy.
  7. Serve it warm with dairy-free ice-cream, custard or yoghurt.
