South Indian filter coffee
Background
Indian filter coffee is a drink made by mixing frothed and boiled milk with the decoction obtained by brewing finely ground coffee powder in a traditional Indian filter. The drink is also referred to as Madras filter coffee, Kumbakonam degree coffee or Mysore filter coffee. This recipe is the traditional way of making filter coffee. You will need the south Indian coffee filter to brew which is a metal device that resembles two cylindrical cups, one of which has a pierced bottom that nests into the top of the tumbler cup leaving ample room underneath to receive the brewed coffee. The upper cup has two removable parts: a pierced pressing disc with a central stem handle and a covering lid. This is easily available in most utensil shops in India as well as online. The taste of the coffee, largely depends on the type of ground coffee used. Filter coffee needs to be served immediately as soon as it is made. You can have filter coffee just as a single beverage or serve it after breakfast.
Ingredients
- 3 Tbsp coffee powder
- 1 cup water
- 2 cups thick whole milk
- Sugar as required
Instructions
- Put 3 Tbsp of coffee powder in the upper cup of coffee filter. Fix it on the top of the lower container gently, so that the powder will settle evenly.
- Bring water to rolling boil and pour it over the coffee powder. Close it with lid and leave it undisturbed for 10-15 minutes.
- The coffee decoction will get collected in the lower container.
- Boil milk and simmer for a few minutes stirring continuously. Pour needed decoction in a cup and add milk and sugar to taste.
- If you want it strong, add more decoction, if you prefer mild coffee, add less decoction.
- Serve hot and frothy in tumbler and enjoy the aroma and taste of south Indian filter coffee.
