Background
Amaranth is one of my favorite greens as it is versatile and can be used in various preparations like amaranth stir fry, dal, pakora and parathas. This Amaranth leaves moong dal stir fry is an easy dish to make and is a favourite of mine for this vegetable. It goes well with rice as well as roti.
Ingredients
- 3 cups chopped amaranth leaves
- Β½ cup moong dal (dehusked green lentils)
- 4 garlic pods
- 4 green chillies chopped
- 1 tsp split black gram dal
- 1 tsp yellow lentils
- 1 red chilli broken
- Β½ tsp cumin seeds
- Β½ tsp mustard seeds
- A pinch of asafetida
Instructions
- Wash and soak green lentils for 10 minutes.
- Heat oil in a pan, crackle mustard seeds and cumin seeds, and add asafetida, red chilli, black gram dal, yellow lentil, garlic pods and fry for a minute.
- Add green lentils and fry for 2 minutes, now add chopped amaranth leaves, salt and cover with a lid.
- Cook for 10 minutes till the green lentils are cooked so that the dal is cooked and hold its shape. It should not be over cooked.
- Serve hot with steamed rice or roti.
