Amaretti cookies
Background
I love baking these Amaretti cookies during festivities as they are not only yummy and deliciously fragrant, but super easy to make and very versatile to use - you can have them as snacks during the day or party nibbles with a glass of fizzy or serve them with a cup of (mid-morning or after dinner) coffee. They can also be used in trifles and cheesecakes or crumbled on top of ice cream, fruit pots, fools etc. They can also make an ideal gift at Christmas, Valentine’s day or Mother’s day - and are gluten-free & dairy-free so perfect for those with these food intolerances.
Ingredients
- 2 egg whites
- 170g white caster sugar
- 170g ground almond
- 15 ml Amaretto liquor
- icing sugar (optional)
Instructions
- Preheat the oven to 170°C. Line 2 baking trays with baking paper.
- Beat the egg whites in a large mixing bowl until firm.
- Fold in gently the sugar and the almond. Add the amaretto and mix gently until you get a smooth paste.
- Using a teaspoon, place dollops of the mixture on the trays, approx. 2cm apart.
- Bake in the middle of the oven for 10- 15 minutes until lightly golden.
- Let them cool on a wire rack, then roll them in icing sugar if you like, or transfer them to a biscuit tin.
