Background
During the festivities I always keep jarred goodies in my larder & fridge as these are excellent ingredients for quick snacks and nibbles when someone pops around for a drink. These anchovy bites don’t need any cooking nor fresh ingredients (although you can use fresh red pepper if you like). They are perfect with an aperitif or they make excellent party nibbles.
Ingredients
- 1 pack marinated anchovy fillets
- 1 roasted red pepper from a jar
- Few sweet and sour gherkins
- Few cooked & marinated beetroots
Instructions
- Drain the anchovies.
- Drain the pepper and cut into 1 cm cubes.
- Thinly slice the gherkins. Cut the beetroot into small cubes.
- Put a piece of pepper in the middle of each the anchovy, roll it up then thread it onto a toothpick or cocktail stick. Then thread one piece of gherkin and one piece of beetroot onto each stick.
- Arrange the bites on a plate and serve.
