Apple and blueberry crumble with walnuts and oats
Background
This apple and blueberry crumble with walnuts and oats is vegan, yummy and super easy to make. Serve it with custard, vanilla ice-cream or crème fraîche. It’s perfect dessert after a Sunday roast or midweek supper. If dairy is not an issue for you, you can use soft butter for the recipe. For a gluten-free version use appropriate flour mix and rolled oats.
Ingredients
- 4 green cooking apples
- 150g blueberries
- 4 Tbsp apple juice
- 4 Tbsp unrefined muscovado sugar
- 2 tsp cinnamon
- ½ cup rolled oats (gluten-free,if needed)
- 1 cup flour (gluten-free, if needed)
- ½ cup chopped walnuts
- 75g dairy-free soft margarine (approx.)
Instructions
- Preheat the oven to 180°C.
- Peel and core the apples, then chop them into thin wedges. Line an oven-proof dish with the apple pieces, pour over the apple juice, then scatter the blueberries and walnuts on top.
- Dust with 2 Tbsp of sugar and half of the cinnamon.
- In a bowl, rub the margarine with the flour and cinnamon until you get lumpy breadcrumb-like mixture. Add the remaining sugar and oats, then mix well. Add more margarine if you think it’s too dry.
- Cover the apple & blueberry layers with the crumble, slightly pressing it down with the base of a spoon.
- Bake for about 20 minutes until golden.
- Serve warm.
