Apple and cinnamon waffles
Background
I love waffles for weekend brunch and this is one of my favourite recipes. It takes a bit longer to make than basic waffles, but the home-made caramelised apple sauce is well worth the extra 15 minutes cooking time! These apple and cinnamon waffles are perfect all year round, ideal for a special breakfast, brunch or afternoon tea.
Ingredients
- 1 cup flour
- 2 tsp baking powder
- 2 Tbsp oil or melted butter
- 2 Tbsp maple syrup
- 2 eggs
- 1 green apple, grated
- 1 tsp cinnamon powder
- For the apple sauce:
- 1 green apple
- 1 Tbsp apple juice
- 1 knob soft butter or 1 tsp oil
- 1 Tbsp muscovado sugar
- 2 Tbsp maple syrup
- Couple of pinches of cinnamon
Instructions
- Put the waffle ingredients in a blender and whiz until you get a smooth batter. Set aside to rest.
- Make the apple sauce. Peel the apple, remove the core and chop it into 1cm cubes.
- Put the apple cubes in a small, non-stick saucepan, add the apple juice, maple syrup, sugar, butter and cinnamon. Cook for about 10-15 minutes, until the apple lightly caramelises.
- When the apple cubes are sticky and tender (but not mushy!), turn off the heat.
- Heat the waffle maker. Once itβs hot, spoon in some batter and sea, following the machine instructions. Make about 4 waffles (depending on your waffle maker) one by one. Keep them warm.
- Serve the waffles with the caramelised apple sauce, dusted with some cinnamon.
- Serve the warm waffles with the raspberry yogurt drizzled on top.
