Apple and ginger braised red cabbage

Background
Christmas dinner is not complete without braised red cabbage. It can be cooked in advance and reheated while the turkey/goose/duck/pork is resting. This apple and ginger braised red cabbage is a zingy version that tastes and smells of Christmas.
Ingredients
- 1 apple
- 1 small red cabbage
- 1/ red onion
- 4 Tbsp red wine vinegar
- 3 Tbsp muscovado sugar
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 100 ml apple juice
- Salt& pepper to taste
Instructions
- Peal, then grate the apple.
- Thinly slice or shred the cabbage, then cut the onion into thin slices.
- Put everything into a heavy based pan and gently heat it up.
- Cover with a lid and cook for 25-35 minutes over low heat.
- Occasionally stir it and add some more apple juice if it starts sticking to the base.
- The cabbage should be soft but not become mushy.
- Serve warm.
