Apple and ginger waffles

Background
These spiced apple and ginger waffles are really lovely for an autumnal weekend breakfast! They are very easy to make and you can serve them with your favourite toppings such as ice cream, apple sauce, caramelized walnuts, custard and so on.
Ingredients
- 1 cup self-raising wholewheat flour
- 1 tsp baking powder
- 1 Tbsp oil
- 2 Tbsp honey
- 2 small eggs
- ½ cup almond or other plant-based milk
- 2 apples, grated
- Β½ tsp ground ginger (or more to your liking)
- Β½ tsp cinnamon powder
- β cup walnut (optional)
Instructions
- Put all ingredients, except the grated apple, in a blender and whiz until you get a smooth, thick batter. Add more milk, if needed.
- Fold in the apple, then set aside to rest.
- Heat the waffle maker. Once itβs hot, spoon in some batter and cook following the machine's instructions. Make about 4 waffles (depending on your waffle maker), one by one. Keep them warm.
- Serve the waffles with caramel sauce or your own toppings/sauces.
