Apple and pear muffins

Background
These apple and pear muffins are perfect snacks for the autumn - they taste delicious and go so well with a cup of tea or coffee! Alternatively take them with you to a picnic or serve them at a party during holiday seasons!
Ingredients
- 2 medium eggs
- 100 ml vegetable oil
- 200 ml milk (or dairy-free milk)
- 100g unrefined cane sugar
- 300g self-raising flour
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 2 apples
- 2 pears
- Maple syrup (optional)
Instructions
- Preheat the oven to 200°C. Line a muffin tin with paper cases.
- Sift the flour, cinnamon, ginger together in a mixing bowl.
- In another bowl mix the eggs with the milk, oil and sugar.
- Peel & core the fruits, then coarsely chop them into small pieces.
- Add the fruits to the flour mixture, gently stir with a wooden spoon. Pour in the egg-mixture. Mix until just combined.
- Fill the muffin cases with the batter and bake in the oven for about 25 minutes until golden brown.
- Move them to a wire. While they're still warm, prick their top with a skewer and spoon some maple syrup over them, if you like. Let them cool.
