Background
My favorite pudding is the crumble. It's not a terribly photogenic dessert but it ticks all the other boxes: it's cheap, easy to make, can be adjusted to suit most diets and the healthy versions are just as yummy as the full business! The classic crumble is, of course, apple crumble. In this recipe I make it with reduced sugar. The flour can be substituted with gluten-free flours or combined with rolled oats and/or nuts.
Ingredients
- For the crumble:
- 100g flour
- 1 tsp cinnamon
- 100g soft butter or dairy-free spread
- 50g unrefined sugar
- For the filling:
- 4 apples
- 2 Tbsp lemon juice
- ½ tsp cinnamon
- 1 Tbsp soft brown sugar
- Optional: couple of star anise, ½ tsp ground cloves
Instructions
- Preheat the oven to 180°C.
- Butter or oil a deep oven-proof dish then lay the apple slices close together & on top of each other. Drizzle with the lemon juice, sprinkle with sugar &, cinnamon (and add the cloves & star anise if used).
- Combine the flour with the cinnamon. Mix in the butter in small chunks and using your fingers and rub with the flour until you get a mixture resembling breadcrumbs. Add the sugar, mix well.
- Sprinkle the crumble evenly on top of the apple, slightly pressing down.
- Bake for about 30-35 minutes until golden.
- Serve warm with custard, double cream or ice-cream.
