Background
If you like South-East Asian food save this zingy cucumber salad recipe in your folder as it will be a very useful condiment for all sorts of dishes. It only takes 5 minutes to make!
Ingredients
- 1 cucumber
- 2 Tbsp rice vinegar
- 2 Tbsp toasted sesame oil
- 1Β½ tsp palm or unrefined cane sugar
- 1 small clove garlic
- 2 tsp grated ginger
- 4 spring onions
- 1 handful coriander (cilantro) leaves
- 1 handful mint leaves
Instructions
- Wash the cucumber, remove the ends and cut in half lengthwise. Using a spoon scrape the seeds out and discard.
- Slice the cucumber into half-moon-shaped pieces then put them in a serving dish.
- Mix the vinegar with the sugar and oil. Grate the garlic & ginger and add to the dressing.
- Remove the seeds and veins of the chilli, chop the flesh finely and add to the cucumber.
- Slice the spring onion diagonally, then add to the cucumber.
- Chop the herbs, add to the salad.
- Pour the dressing over the salad, toss well.
