Avocado and roasted pepper hummus tacos

Background
These Avocado and roasted pepper hummus tacos are ready in just 5 minutes. The ingredient that makes it special is the roasted pepper hummus which you can make yourself or use ready-made one from a deli. The tacos can be wheat or corn based.
Ingredients
- 4 Tbsp roasted pepper hummus (mixed with some chilli sauce, if liked)
- 1 avocado
- Β½ lime
- 2 ripe tomatoes
- 4 spring onions
- 2 handful of rocket leaves
- Jalapeno slices (optional)
- 4 mini tortilla wraps or taco shell
Instructions
- Peel then slice the avocado. Squeeze some lime juice over the slices.
- Chop the tomatoes and spring onions.
- Gently toast the tortilla wraps or taco shells, then spread some hummus on them, then scatter some tomatoes, spring onions and rocket leaves on top.
- Finally add the avocado and Jalapeno (if used) and serve.
