Background
This avocado dip with basil is a bit like guacamole pesto. It tastes very fresh and zingy but it's not spicy at all, so kids can enjoy it too. Ideal for parties or as an appetizer all year round. Serve it asΒ topping on crostini/blini or as a dip with tortilla chips, toasted pita or bread sticks.
Ingredients
- 3 ripe avocados
- Freshly squeezed juice of 1 lemon
- 3 spring onions, chopped
- 1 bunch of basil, leaves only
- 1 clove of garlic, pressed
- Ground salt and ground pepper
Instructions
- Peel the avocados, then mash the flesh roughly with a fork.
- Chop the basil leaves and chop the spring onions (or put them into a small food processor and blend for a few seconds).
- Combine the crushed avocado with the chopped basil & spring onions. Add the lemon juice & garlic and season to taste with salt & pepper.
- Mix well, but the dip should remain textured not smooth!
