Background
This avocado and red pepper salsa is perfect for burgers, wraps, sandwiches – or you can serve it as a side salad with grilled meat/fish or a chilli. It’s super easy to make , it’s healthy, a bit spicy, but most importantly it’s really yummy!
Ingredients
- 1 Romano pepper
- ½ red onion or 2 shallots
- Juice of 1 lime
- 1 ripe avocado
- 1 Tbsp olive oil
- 1 jalapeno pepper or red chilli
- 1 Tbsp chopped coriander
- Salt and pepper
Instructions
- Chop the red pepper and onion into tiny cubes then put them in a mixing bowl.
- Peel the avocado, remove the stone and cube the flesh. Add the avocado pieces to the bowl and pour over the oil and squeeze over the lime juice. Add the chopped herbs, season to taste.
- Deseed the chilli and remove the veins if you don’t want it too spicy. Chop it up and add to the salsa. Toss and rest until serving.
