Bacon and cod bites

Background
If you have friends coming round for a drink or you're having a party, these bacon and cod bites are perfect nibbles to serve. They are really quick and easy to make and they can be prepared in advance. They're also nice as picnic snacks.
Ingredients
- 5 smoked streaky bacon rashers or pancetta slices
- 1 cod loin (bone & skinless)
Instructions
- Cut the bacon first lengthwise, then across - i.e. you should get 4 thin strips per rasher.
- Cut the fish into 2-3 cm cubes. Roll up each fish piece in a bacon piece (starting at one end).
- Lightly oil the base of a frying pan and heat it. When it's hot, put the wraps in the pan - the overlaps of the bacon should be underneath. After a minute turn them over and cook for a minute, then roll them on their side and cook again. When the wraps are crispy all over, move them onto a plate, lined with paper kitchen towel.
- Alternatively put them on a lined baking tray and grill them in the oven until crispy.
- Serve them with toothpicks or as finger-food.
Tips
- You can make these little bites even more tasty if you grate some lemon zest over the fish and add a pinch of herbs (thyme, basil, rosemary or sage) before wrapping them up.
- Or brush the top of the fish pieces with some chili paste then wrap them in the bacon.
- Or add a piece of sliced olive/roasted pepper/sundried tomato then wrap them in the bacon.
