Bacon wrapped chicken breast

Background
This bacon wrapped chicken breast is baked in white wine so it's moist and the bacon provides the smoky flavour. It's incredibly simple, yet so delicious and delicate that this dish would be suitable for dinner parties! You can use otherΒ herbs that you may prefer - tarragon, oregano, thyme, basil alsoΒ work just as well. Serve it with a mash and/or a salad.
Ingredients
- 2 chicken breasts (boneless and skinless)
- 2 smoked bacon or 4 strips of streaky bacon
- 1 sprig of rosemary or 2 sprigs of thyme
- 1 clove of garlic
- olive oil
- 100 ml white wine
Instructions
- Preheat the oven to 180°C.
- Cut the garlic into 4 slices. Make 2 x 1cm deep cuts in the chicken and push the garlic slices into these.
- Cut the rosemary in half and place these on top of the chicken breasts. Wrap the chicken with the bacon, secure with a skewer. Brush some olive oil all over, then place the wrapped chicken breast in a baking tray. Season with salt and pepper, then pour the wine over.
- Cook in the oven until the chicken is cooked through and the bacon is crispy (you can use the grill setting for the last couple of minutes). This should take about 20-25 minutes.
- Serve with the pan juices drizzled on the top.
