Bacon-wrapped goat's cheese stuffed figs

Background
These bacon-wrapped goat's cheese stuffed figs are perfect little snacks for a drinks party or make a gorgeous appetizer at a dinner party. You could also serve them as a starter on top of some green salad. They are really easy to make and are absolutely delicious!
Ingredients
- 4 figs
- 8 rashers of smoked streaky bacon
- 50g goat's cheese
- 2 Tbsp Maple syrup (approx) or runny honey
Instructions
- Turn on your grill in the oven. Lay the bacon on a non-stick tray and grill for 5-8 minutes until lightly browned (not crispy).
- Take the tray out of the oven and brush the bacon with maple syrup.
- Meanwhile cut the figs in half and scoop out some of the flesh with a spoon - just enough to create a small well. Brush the inside area of the figs with more maple syrup.
- Mash the goat's cheese with the remaining maple syrup and stuff the figs with this.
- Carefully wrap the bacon around the figs - the bacon should overlap itself underneath the figs.
- Place the wrapped figs on the tray (on top of the bacon fat) and cook in the oven for about 5- 8 minutes, until the bacon is crispy and the figs have slightly softened.
- Serve warm or at room temperature.
