These easy yet delicious bacon wrapped parsnip bites are wonderful party nibbles during the winter festivities. They can be served cold or warm as an appetizer, snack, or even as a side-dish with your roast turkey.
Ingredients
- ½ kg of parsnip
- 2 Tbsp olive oil
- 1 sprig of rosemary
- 100g pancetta or smoked streaky bacon
Instructions
- Preheat the oven to 200°C.
- Peel the parsnips and cut into 5-6 cm long, thin sticks.
- Blanch these in boiling, slightly salted water for 2 minutes, then rinse with cold water, drain, and wipe clean with a kitchen towel.
- Finely chop the rosemary leaves.
- Toss the parsnip with oil and the rosemary. Wrap the middle of 3 or 4 pieces of the parsnip sticks together with a bacon strip.
- Place these wraps in a baking tray and cook in the oven for about 25 minutes, until the bacon is crisp and parsnips are golden.
