Background
Badusha is an Indian sweet dessert which is prepared mainly with all purpose flour, deep fried in ghee and soaked in sugar syrup.
Ingredients
- * For dough: *
- 1Β½ cup All purpose flour
- Β½ tsp Sugar
- Β½ tsp Baking powder
- Water as required
- ΒΌ cup Ghee
- ΒΌ cup Yogurt
- Ghee for deep frying
- * For sugar syrup: *
- 1 cup sugar
- Β½ cup water
- Pinch of saffron
- ΒΌ tsp Cardamom powder
Instructions
- In a pan, add sugar and water to make the sugar syrup. Let it boil and form One string consistency. Add saffron and cardamom powder to it and set aside.
- In a mixing bowl, add all purpose flour, sugar and baking powder.
- Add ΒΌ cup ghee to the mixture and mix well. The mixture will be crumbly.
- Then add the yogurt and mix well.
- Now add approximately ΒΌ cup water to the mixture and let it rest for 15 minutes. Do not knead the dough at this point.
- Knead the dough gently and make sure it is not too soft or runny.
- Take a small portion of the dough and roll it into a small ball with your hands.
- Take the dough ball and flatten it on your palm. Make sure to maintain some thickness.
- Make a small dent at the center of the ball. Keep aside. Do the same with remaining dough.
- Take a deep bottomed pan and add the ghee for deep frying. Heat the ghee.
- Fry all the dough portions on medium heat until they turn golden brown.
- Drop them into sugar syrup immediately and coat them with syrup on both sides. Soak for 5 minutes.
- Take them out of sugar syrup and optionally garnish them with cashews or coarsely pound almonds.
