Background
When you have leftover grilled/roasted bell peppers you use these for many easy dishes, like this Bagel with avocado and grilled pepper. If you donβt have any, just use jarred roasted peppers. If youβre using plant-based pesto, dish recipe is suitable for vegans and those with dairy intolerance. You can use gluten-free bagels too.
Ingredients
- 2 bagels
- 1 avocado
- 1 tsp red vegan pesto
- Few pieces of sundried or sun blushed tomatoes , from jar
- 1 grilled or roasted red bell pepper
- Basil leaves
Instructions
- Cut the bagels in half horizontally and lightly toast them.
- Meanwhile, peel the avocado. Cut the avocado flesh and red pepper into strips. Drain the sun-dried tomatoes and cut them, if necessary.
- When the bagels are toasted, spread some pesto onto their cut sides, then lay the avocado, tomato and pepper onto the lower half.
- Add a few basil leaves, then cover with the top half.
- Serve.
