Bagel with egg and chorizo

Background
This bagel with egg and chorizo is perfect for a laid-back breakfast or brunch. If dairy is not an issue for you, then serve it with some grated cheese on top. The bagel can be gluten-free too.
Ingredients
- 1 bagel
- 4 cm piece chorizo
- 1 spring onion
- 2 eggs
- Β½ red pepper
- Chopped Parsley
Instructions
- Remove the skin of the chorizo.
- Cut the chorizo, red pepper and spring onion into tiny pieces.
- Heat a small frying pan and the chopped pieces. Keep stirring until the chorizo has released its fat. You might need to add a drop of oil. Sautee for 5 minutes.
- Beat the eggs in a small bowl. Add the mixture to the pan and keep stirring until the egg is fluffy and cooked through.
- Put a lid on and turn off the heat.
- Meanwhile, cut the bagel in half, then lightly toast both halves in a toaster.
- Spread some butter or dairy-free alternative over them, then spoon the egg mixture on top. Garnish with chopped parsley and serve.
