Bagel with egg, avocado and grilled pepper

Background
This bagel with egg, avocado and grilled pepper is ideal for a weekend breakfast or brunch. I made it with fried egg, but you can use scrambled or poached egg, if preferred. You can use jarred roasted pepper or your own grilled/barbecued/roasted bell pepper. Meat loversΒ can add a slice of fried /grilled bacon.
Ingredients
- 2 bagels
- 2 eggs
- 1 avocado
- 1 tsp pesto vegan or guacamole
- 1 grilled or roasted pepper
- Parsley, coriander or basil leaves
Instructions
- Cut the bagels in half horizontally, then lightly toast them.
- Cook the eggs - either fry them or pouch them.
- While the eggs are cooking, peel the avocado, then cut it into thin slices. Cut the grilled red pepper into long strips.
- Spread some pesto or guacamole on the base of the bagel, then lay the avocado and pepper slices on top.
- Put the egg on top of the avocado and pepper, then garnish with some herbs of your choice.
- Serve warm.
