Bagel with poached egg and sesame kale
Background
On weekends most of us prefer eating a more hearty breakfast or brunch. Poached eggs take only 5 minutes to make, whilst you can Β stir-fry, grill, steam or blanch some veggies; meat eaters can grill or fry some bacon. This bagel with poached egg and sesame kale is a lovely and healthy dish, ready within 10 minutes. For a spicier version add a chilli (chopped), or a pinch of chilli flakes to the kale.
Ingredients
- 2 bagels
- 2 eggs
- 1 tsp Vinegar
- 1 Tbsp sesame oil
- 1 clove of garlic, chopped
- 2 spring onions, chopped
- 50g chopped kale
- 2Tbsp Kikkoman soya sauce
- 1 Tbsp Sesame seeds
Instructions
- Put a pan of water (about 5 cm deep) on the cooker and bring to the boil.
- Meanwhile, heat the oil in a wok, add the garlic & spring onions and stir-fry for 30 seconds then add the kale and soy sauce. Keep stirring for a minute, scatter the sesame seeds on top, then put a lid on and turn down the heat.
- Cut the bagels in half and toast them.
- When the water is boiled, add the vinegar, make a twirl with spoon and add the eggs, one-by one (it might help to put each in a small cup first). Cook for 2 minutes.
- Put the toasted bagels on two plates, butter them if you want (or you can add miso, pesto or any kind of spiced spread/paté).
- Remove the eggs from the water with a slotted spoon and put them in the holes of the bagels, then spoon the kale around them. Season with salt&pepper and dust each egg with a pinch of sesame seeds.
