Baked beans with anchovy
Background
If you like baked beans, why donβt you try this interesting version, made with anchovy? If you like meat, you can add 50g pancetta or lardons to the recipe ( after the onion and garlic have softened). These baked beans with anchovy are perfect for breakfast/brunch or go really well with grilled meat and fish. I made it with pinto beans, butΒ you can use cannellini beans, black beans, haricot beans etc for this recipe.
Ingredients
- 30g butter or 1 Tbsp olive oil
- 2 or 3 canned anchovies
- 2 medium onions
- 3 medium tomatoes
- 1 Tbsp. tomato purΓ©e
- 1 Tbsp chopped basil ( or1 tsp dried oregano)
- Β½ tsp brown sugar
- 2 tins of beans (such as pinto)
- 1 cup water
Instructions
- Melt the butter, add the anchovy, garlic, onion. Gently sautΓ© for 5 minutes. Add the tomatoes and cook for another 5 minutes.
- Add the beans, tomato purΓ©e, herbs, sugar and stir for a few seconds.
- Add the water and bring to a boil.
- Gently simmer for 30 minutes under cover.
- Serve warm.
