Baked chicken and celeriac with Stilton sauce
Background
If you need an easy recipe for a laid-back dinner party or for celebrating an anniversary do try out my baked chicken and celeriac with Stilton sauce recipe! I made this recipe up in order to finish some leftover pear cider and Stilton cheese in the fridge. The result was truly delicious. Next time Iβll try adding a fresh pear to the dish too! I served it with mashed potatoes and a crispy salad.
Ingredients
- 2 legs of chicken (or 4 thighs/ drumsticks)
- 1 stick of celery
- 1 small or Β½ large celeriac
- Β½ can Perry cider
- Β½ cup crumbled Stilton
- 1 Tbsp Chopped Walnuts (optional)
Instructions
- Preheat the oven to 180Β°C.
- Slice the celery. Peel and cut the celeriac into long, thick chunks.
- Place the chicken pieces, skin side down, into a baking dish and scatter the celery and celeriac around them.
- Pour over the cider then season to taste.
- Bake for 25 minutes.
- Take the dish out of the oven, turn over the chicken and scatter the crumbled Stilton all over.
- Bake for another 20-25 minutes until the chicken is golden and the cheese has melted and browned.
- Serve the chicken & celeriac with the cheesy sauce, garnished with chopped walnuts, if liked.
