Baked mushroom with butterbeans

Background
This zingy, baked mushrooms with butterbeans can be served as a vegan main dish (for example on a piece of toast or with mashed potatoes); or a side dish with grilled meat/fish. It’s really easy to make and super healthy too.
Ingredients
- 200g baby button or chestnut mushroom
- 1 lemon, juiced
- 2 Tbsp olive oil
- 2 cloves of garlic, minced
- 4 sprigs of Thyme
- ½ tsp chilli flakes (optional)
- 1 tin butter beans, drained
- 2 Tbsp chopped parsley
Instructions
- Preheat the oven to 180°C.
- Scatter the mushrooms into a baking dish, add the thyme leaves and garlic, then drizzle with the oil and lemon juice. Season to taste, and combine well.
- Bake in the oven for about 15-20 minutes until the mushrooms have softened and golden.
- Mix in the beans and put it back in the oven for 5 minutes to warm through.
- Serve warm, garnished with the chopped parsley.
